
MM MMMmmm Mmmmmmm...I made a Seafood Casserole (sent to me by Miss LB) the other night for dinner and it pretty much left the whole household at a loss for words. I had a huge craving for some shellfish since my walk on the beach on Sunday, which was delightful, so I decided to take a stab at this wonderful dish. A short while later, the fam was in heaven with a glass of chilled white wine and a meal that was better than take out!
I did change the recipe a little, as the original called for walnuts, and I def wasn't having that. I was also surprised to find how easy this was too make, taking all of 25 minutes! The dish can be served as a simple casserole or cook up some pasta to accompany the flavors!
This is a wonderful dish for dinner parties, evening at home, or making dinner for that date you have coming up. Show 'em whatcha got!
Seafood Casserole
Ingredients
1 bag of Trader Joes Seafood Blend (scallops, baby shrimp, calamari)
1 bag of Jumbo Shrimp
1 can of fresh crab meat
Ingredients

1 sleeve of ritz crackers
½ stick of butter
½ (12 oz.) package of mozzarella cheese
pinch of salt
pinch of pepper
½ teaspoon of garlic
Parmesan cheese (if desired)
Directions

Directions
- Preheat the oven to 425 degrees.
- Saute up the seafood in a pan with butter, salt, pepper, and garlic
- Once the Seafood is cooked through, begin layering it in a casserole dish like so:
- Seafood
- Crushed Crackers
- Crabmeat
- Mozzarella cheese
- Sprinkle parmesan cheese on top (if desired).
- Sprinkle parmesan cheese on top (if desired).
- Bake at 425 degrees for 15minutes.
